Are you looking for a healthy Easter treat that the whole family will love? Then these sugar-free carrot cakes are a great solution! Rich in nutrients and super moist, they're a fantastic alternative to chocolate Easter eggs and other treats. These muffins are not only suitable for all ages but are also ideal for introducing solids and baby-led weaning. Celebrate Easter with a healthy and delicious snack for the whole family!
You need:
- 2 eggs
- 180g applesauce
- 1 tsp cinnamon
- approximately 200g grated carrots
- 1 tsp baking powder
- 80g rolled oats
- 120g flour (spelt, wheat or wholemeal)
- 30ml (rapeseed or coconut oil)
- 50g grated nuts (optional)
Here's how:
- Preheat the oven to 180 degrees and line a muffin tin with muffin cups.
- Mix all the liquid ingredients together and grate the carrots.
- Add the dry ingredients to the wet ingredients and mix until a homogeneous mixture is formed. If the dough is still too sticky, you can add a splash of milk (plant-based or cow's milk).
- Finally, add the grated carrots and fill the muffin tins.
- Bake for approximately 25 minutes (varies depending on muffin size,...)

PS: If you want the dough to be a little sweeter and suitable for children aged 1+, you can also add some maple syrup.
